Rolled Oats Griddle Cakes
2 cups rolled oats, uncooked, 1 1/2 cups flour, 1
teaspoon salt, 1 teaspoon soda dissolved in 2
tablespoons hot water, 1 teaspoon baking powder, 2 1/2
cups sour milk or buttermilk, 2 eggs lightly beaten, 1
or 2 tablespoons butter , according to richness of milk.
Soak rolled oats in milk overnight. In the morning sift
flour, baking powder, 1 cup sugar and salt together. Add
this to the rolled oats mixture. Then add melted butter
and eggs. Beat well and cook as griddle cakes.
Cereal Coffee
One quart wheat bran, 2 quarts corn meal, 3 well beaten
eggs, 1 1/2 cups sorghum molasses, 1 cup ground coffee.
Put all together in a pan and mix with hands until
thoroughly mixed together. Then spread out on a pan and
place in a slow oven, dry and pulverize. Then increase
the heat and brown to a darker shade than store coffee.
Place in tight cans and it will keep for a year. 1
teaspoon makes 2 cups of coffee.
Apple Butter
To one gallon of apple pulp that has been cooked and run
through a colander add 2 1/2 pounds brown sugar and 1
cup cider vinegar. When cooked enough add ten cents
worth of red hots and stir until dissolved.
